Today started out as one of those difficult kinds of days where baking is the only cure. So, at work I decided I was going to bake. I asked my esteemed morning colleague what kind of cookies he would prefer tomorrow and he suggested cookies with raisins or some kind of fruit, but I heard "white chocolate chip" float over my little cubicle wall. Hmm...I remembered I had white chocolate chips at home....but when I got home I found I had normal chocolate chips too. I decided on a mix (:
Mixed Chip Cookies
I used the recipe on the back of the Nestle Toll House Choco Chip bag, but of course I made it my own. Also, looking at the recipe for white chocolate chip cookies on their bag, I saw that there was cocoa in the cookie dough and thought it was a wonderful idea.
Combine....
2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/4 cup cocoa
Cream....
1 cup (2 sticks) butter
3/4 cup white sugar
3/4 cup brown sugar
1 teaspoon vanilla
2 eggs
Once smooth, mix the dry ingredients with the wet, mixing in a little at a time...
Drop spoon fulls on baking sheet ( I like to put parchment paper on my sheets so nothing sticks and to minimize mess. I HATE mess on my cookie sheets).
Cook in oven heated to 350 degrees, for 8 to 11 minutes, depending on how you like them. I found that they spread a lot this time. So my itty bitty dough balls became decent sized yummy cookies. So be careful and don't put them too close together.

The cookies and pictures look really good. Looks like you will need a lot of help eating all those cookies. Hope you save me some and don't bring all to work. Cookies and icecream.
